PROCESS

This coffee is one of its kind, which came into mind after several months of research of washed processes, lead at our farm el Vergel. It consists of a 2 step anaerobic fermentation, the first one being a pre-fermentation in a stainless steel tank for 60 hours in a range of 18 to 24-celsius degrees, after this first step, the coffee was depulped and went through another 36 hours of CM fermentation with a reduction of water and the most juice, creating a unique red color to the parchment when finished the second fermentation. For the drying, the coffee was taken ro rised beds for 18 days, with 2 stalls in the middle to enhance a pre-stabilization during the drying phase.
